Berry Coconut Bibingka
Instructions
  1. Pre-heat the oven to 375°F. Line the baking sheet with parchment paper and trim the edges.
  2. In a saucepan over medium-low heat, combine 1/4 turbinado sugar, 1/2 cup water, and the prepared berries until the liquid reduces by half. The berries should not be overly mushy and the liquid should have the consistency of syrup, not jam. Set aside.
  3. Mix the sweet rice flour and baking soda. Set aside.
  4. In another bowl, we will combine the wet ingredients. Cream the remaining 1/4 cup of turbinado sugar, eggs, and vanilla extract. Once it resembles the consistency of frosting, slowly add in the coconut milk or cream and avoid splashing.
  5. Now let's combine both wet and dry ingredients, fold in the dry ingredients about 1/4 cup at a time into the wet mixture. Then, pour out the coconut base onto the parchment-lined baking sheet. Smooth it out with a spatula as best as you can.
  6. Spoon out the strawberry and blackberry syrup (leave the berries) on top of coconut base. Take a toothpick and run it up and down the pan to make a swirl-like pattern.
  7. Spoon out the berries and place them on top of the swirl. Place it in the oven and set your timer for 30 minutes.
  8. After 30 minutes of baking, check for doneness by inserting a toothpick in the center. If the toothpick comes out with a lot of sticky residue, replace it in the oven for another 15 minutes. If the toothpick comes out clean, it's ready!
  9. Serve immediately! If serving later, reheat in the oven for 300°F for 5-10 minutes.
